I just this moment developed a fear of zip lining. I saw a picture of one of my friends from high school about to jump onto the zip-line, and it stuck fear to my very core at the prospect of jumping, snapping the cord, and dying.
The 10:00 shindig at the school is going well. It makes my day seem like it's over before it's even begun, and I get to enjoy a nice big cup of coffee before going in. Also, I'm working through my egg/tomato/cheese combination breakfasts like there is no tomorrow. Because they seem so repetitive I'm not going to bother with posting pictures of them, but I will explain my variations on a theme because they go so perfectly together.
Egg/tomato/cheese breakfasts:
1. See previous post of eggs topped with bacon, onions, and goat cheese and a side of roasted tomato. Oh, my! Delicious.
2. Scrambled eggs with cottage cheese, fresh bread toast, and sliced tomato. A classic. Super fast and easy.
3. Egg burrito with scrambled eggs with Colby Jack cheese, sauteed peppers and onions, Queso fresco, sour cream and cilantro and (the tomato) salsa! Ai! Ai! Ai!
4. um...That's about all I can think of right now. Let me know if you have a great egg/tomato/cheese breakfast suggestion and I'll be on it like white on rice!
I want to attempt a souffle since Timothy picked up an 18 pack of eggs and I think I have enough to make one. Problem. Tim hates eggs. :-/ so, I need to make a small one. My favorite quick breakfast out is currently Panera Bread's bacon spinach and cheese souffle. (No tomato, but I think I'll be okay.) I think I'll try that in a mini portion since I'm not a fan of reheated eggs. Bleh!
Yoga update!
I did check in with the Yoga place, and they're going to do a beginners class starting in February. I am basically in charge of recruiting people to come to the class because they only had one person interested. So far I've recruited my bud CA, and I'm working on my 2 coworkers. I'm joining the gym because it's cheaper than paying to attend 2 classes a week, and I get unlimited gym access and unlimited classes. Hollah! And!, it's not required to take the beginners course to go to the other classes, it's just suggested.
Hopefully next time I'll have an *actual* yoga class to report about! :-D

Another way to spend a Snow Day.
This is in the oven right now. It's going to be huge. Literally. The batter came up to the top of the mixing whisk in the mixer. I've never made a cake from scratch before, but this morning was the day to do it. I woke up, made my coffee, and sat down only to be overcome with such an overwhelming urge to make something deliciously rich and chocolaty that it had to be taken care of immediately. Much to my surprise, I already had everything I needed to make this recipe, with the exception of buttermilk. for the 1 & 1/2 cup of buttermilk in the recipe I substituted 1 cup of sour cream and a 1/2 cup of Half and Half. It seems to be a pretty close substitute and there was no way I was about to go up the winding uphill road that is completely iced over to go to the grocery store.
I made the chicken and potatoes I mentioned in my previous post last night. MMMM! Good! (I didn't tell Tim that there was mayo in the mix because he would immediately develop an aversion to it...and without that knowledge, he loved it.) I'll put some pictures and the recipe up soon because it is definitely worth trying...especially if you're trying to learn how to cook meat. ;)

Sunny Side Up in the Snow
Today's adventure was a total OMG moment! I took one of my absolute favorite breakfasts and Pumped It Up!

Snowpocalypse 2011!!!
So, we're on to day three of the Snowpocalypse 2011, and I am SO glad that I have a job that keeps me active because I would sit and watch every show on Bravo for my entire life. I literally sat and watched the Millionaire Matchmaker for 8 hours straight today. Holy Moly. That is too much. I did however get up to make a delicious dinner...well...that's debatable, but Still. It has not been a proud day for me.
So, Sunday night it started snowing as the meteorologists predicted. The evening went like this...Brr. it's cold. Lalala...Aw! Pretty snowflake! Whoa, Snow! and Ahhh...beautiful! Then the world shut down. Srsly. The schools were closed, grocery stores, all businesses, even Wal-mart! Now when Wal-mart closes, you know it's serious. It was rather entertaining to watch the bored reporters out in the snow getting pelted with sleet and then running and sliding on the ice when the roads froze over. No School for three days? I'm totally down with that.
(I'm trying to find a new way to start a paragraph that isn't the word "So.")
During this unexpected break I have accomplished a few things.
1. I discovered that Nigella from the Food Network uses fantastic adjectives.
2. I unknowingly stood-up one of Tim's friends who had stopped by our house for respite so he wouldn't have to drive home on the icy roads. (I still feel like a jerk for that. However, I didn't hear the doorbell, and neither did the dogs and their hearing is like 100 times better than mine!)
3. I vacuumed with my awesome vacuum!
4. I avoided cleaning the bathroom for another week.
5. I watched the brand new episode of Cupcake Wars featuring "Lucy and Leo", the cupcakery from Tally! (Miss you, Tally!)
5. I determined that the Pampered Chef cookbooks are great for ideas but awful for techniques.
Tonight's Dinner:
Moroccan Pork Loin from Pampered Chef 29 Minutes to Dinner Volume 1
-I'm not going to put the whole recipe, but I'll describe it.
The Pork was dredged in flour and S&P and sauted at medium heat. The sauce was white balsamic vinegar reduced by half with raisins added to plump up. Chop some green olives and shallots and toss them in the pork pan when the loins are done cooking, then add the balsamic vinegar and raisin reduction, loosen things up in the pan, and add brown sugar so it's not so biting. It was supposed to have capers, but mine were missing, but I'm sure they would add a nice flavor to the mix. Serve over brown rice.
The pork was tasty, but it didn't really jive with the sauce. I probably needed to cook it a little less in the skillet and a little more in the sauce so they incorporated together. Overall the recipe was good, but for someone who LOVES balsamic vinegar as much as I do, (I swear it runs through my blood,) it wasn't a favorite, and after all of the plugs for unnecessary PC products, I'm feeling a little icky about their cookbook.
Other items on this week's menu: Cranberry Honey-Mustard chicken breasts with Spinach and Rosemary Red Potatoes!

A Little Christmas Spirit
We had a ghost in our house. or maybe she's still here...either way I can't help feeling a bit eerie in my house at night when I'm alone. Heck! Even during the day I feel eerie! If you're feeling up for a ghost story, go ahead and read, otherwise, change blogs, stat!
A group of my friends were going to see a performance of A Christmas Carol in a historic downtown theater. Before the performance, we were going to a "known-to-be-haunted" restaurant for dinner. I showed up and enjoyed a good meal with friends and heard the story of the little girl that haunted the restaurant during dinner. Being an avid Ghost Hunters fan, I couldn't wait to check out the spots where the little girl hangs out, so I headed back to the hallway between the bathrooms and the kitchen to see if she was up to any mischief that night. The coast seemed clear, but things started to get a little funny when I went into the bathroom. The air seemed a little cooler and the hair on my arms and neck were raised. I started to feel nervous and knew that something would jump out or start staring at me from out of the mirror at any second...however, nothing happened. We went to the performance, and I trotted home on my merry way. The next morning is when things started to get spooky. I had my morning coffee and breakfast, took the dogs for a walk, and sat down in the living room to enjoy a nice respite of facebook stalking when it all started. I noticed from the other side of the room that my cat was staring at something behind my chair. Then, his gaze shifted. It shifted again. He was following a movement consistently back and forth behind my chair. I turned around to see if there was a bug or a piece of lint that would have grabbed his attention, but there was nothing. No one was outside. No one was inside. All of the animals were accounted for, and besides me and my computer, no other person was in the house. I quickly scurried over to the other side of the room to see for myself if someone or something was there, but everything was exactly the way it was before. Once my nerves finally calmed down, I convinced myself that the cat must have pulled a swift one on me, and I continued my day by setting out the Christmas decorations. Around lunchtime, I went to prepare myself a snack in the kitchen. As I placed the sandwich materials on the counter I heard something drop on the floor in the middle of the kitchen. I turned around, and right behind me on the floor was a magnet from the refrigerator. This particular magnet was a decorative magnet that was not holding any papers on the fridge. It has a permanent home in the top right corner of the refrigerator door and has never had an issue with its magnetism. I picked it up, dusted it off, and popped it right back on the fridge. No problems with the magnet. No problems with the fridge...so how did it end up in the middle of the kitchen when I was not even close to the fridge?! There was only one explanation I could think of: My ghost-hunting self had brought the ghost home!! AH! I took off to my room and hid under the covers for the rest of the day! At least, until Tim came home and coaxed me out of the bedroom telling me I was a little bit nuts. Since then, I've had a couple of chats with the ghost. According to the story, it's a little girl who was hit by a car while playing in the alley behind the restaurant. She haunts the hallway by the kitchen in the store and pulls jokes on the servers like locking them in the kitchen and moving trash cans around. Since I think she's the one that's here, I told her she has to be nice, and I don't want to see her, but she can hang out and enjoy our house since she's not causing any damage. Since she came around Christmastime, I think she may have just wanted to add a little Christmas Spirit.

New yoga studio?
I found a place that's between my job and my house that is a gym and also has yoga classes. There is a beginners' class starting tonight..well, it started about a half hour ago...I'm interested to see if this studio is worth going to, or if it is too stuffy. (it's in a bit of a stuffy part of town.) To participate in the intermediate/all levels class you have to complete the beginners' course.
Things are going well in L-ville. I'm enjoying my new job. I just had my hours changed, so I am even happier!! I think my kids will be happier, too. No more pre-coffee Ginya around. The transition wasn't completely perfect, but once we got powers figured out things were great...then things changed again, and we're a little in Limbo once more. Limbo should end in February, though. I'm definitely building flexibility in this environment, more mentally than physically, but I do have my kids practice yoga all the time. My kids love Yoga! We do mini yoga every day. (I feel like I need to discuss yoga since it's in my blog address.)
I find myself longing desperately for Tallahassee about once a week. I filled my life with so many wonderful people who have proved so far to be impossible to replace. Not to mention that my crazy co-dependent self needs another person to do Anything. I thank God for my sister because she understands that about me and will come up and help me clean and shop when she senses it. ...plus she gets a free laundromat. ;) HG, I'm seriously glad that I've found your blog again because I needed it!

The transition wasn't completely perfect, but once we got powers figured out things were great...then things changed again, and we're a little in Limbo once more.
